Our newest Business Highlight features Hawg Smoke BBQ, owned and operated by Mandy Spieker. What started as a first-place brisket win at the Knob Noster Fair has grown into a full-service catering business known for incredible BBQ and unforgettable desserts. Mandy not only brings flavor to the table, but she also pours her time and energy into serving the community. From the Chamber of Commerce to the Fair Board - and even hand-filling every Newcomers bag - Mandy goes above and beyond in everything she does. She graciously shared more about her journey through our Q&A, giving us a closer look at both her business and her passion for giving back.
Q: What inspired you to start your business?
A: I did my first BBQ competition during the Knob Noster fair in 2012 and won 1st in Brisket! I was hooked after that and knew I wanted to be a BBQ caterer. It took me around a decade to get there, but now I not only smoke and prepare my favorite desserts, but I also love doing it for large gatherings. In 2020 I knew what I was going to do when I retired from the Air Force, and so I started up Hawg Smoke BBQ.
Q: How long have you been in business, and what has been your biggest milestone so far?
A: I started my catering business with a very different scope than where it is today. The first 4 years were mostly fundraisers for the Warthog Booster Club or catering for friends. Eventually, in 2025, my business grew to the point where I was able to make it my full-time job. I started to focus on BBQ and pastry catering. I don’t see myself slowing down anytime soon!
Q: What is the main mission or philosophy behind your business?
A: I believe that it is important to provide the best possible product to my customers while also actively giving back to the community. Serving the community is just as important as running a successful business. I want to continue working to make both happen.
Q: How does your business contribute to the local community?
A: I have been an active participant in several local community organizations, including the Chamber of Commerce and the local Fair Board. I am eager to connect with those around me and build positive and lasting relationships. Service with these organizations is one way I can give back to the community and also find enjoyment.
Q: What are your most popular products/services and why do you think they stand out?
A: I'm a full-service caterer, and what sets me apart from the competition is that I can meet all your needs, from appetizers to entrees to dessert. With me, you can get everything on your plate to be delicious from beginning to end.
Q: Do you offer any products/services that are unique to your business or not commonly found elsewhere?
A: You no longer have to spend hours or days trying to find different local caterers, chefs, and confectioners just to get everything you need for your party or event. I can do it all for you. From entrees to desserts, I handle everything. That way you can focus on having fun with your guests!
Q: How do you decide on the products or services you offer?
A: Since I decided to become a caterer, I wanted to provide full service. I have catered many events & weddings, and I attribute the success of each one to the full-service aspect of my business.
Q: What are some of the biggest challenges you've faced as a business owner, and how have you overcome them?
A: Time management. As I am just one person, I need to stay very organized. This is one reason I like working from home. When I work in an office, the distractions are endless, and it can be hard to manage my time. Working from home gives me a lot more control over my day. I find that keeping things organized is the key to staying on top of things.
Q: What has been the most rewarding aspect of owning and operating this business?
A: I'm an entrepreneur, and it's been great. Owning my own business has given me the freedom to pick and choose what I want to take on, and I also get the downtime I need.
